Light and sweet, these festive cupcakes are so perfect treats to celebrate a new year. To ring in 2017, I decided on festive champagne cupcakes. I used vanilla cupcake recipe as the base and added champagne to both batter and the buttercream for an extra kick. I used gold pearl sprinkle and dust with rainbow edible dust. Dressed up with gold elegant cupcake liners.
So festive huh!😊😍
INGREDIENTS:
For the vanilla cupcake
- 1 cup all purpose flour
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- Pinch of salt
- 1/4 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/4 cup champagne
For frosting
- 30 ml champagne
- 1 stick unsalted butter
- 1 1/4 cup powdered sugar
- Gold pearl sprinkle and edible rainbows dust ( for decorations)
METHOD:
Pre heat oven to 350 F , line a cupcake pan with cupcake liners. In medium bowl, whisk together the flour, baking powder,baking soda, and salt then set aside. In a large bowl , cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract beat until well combined.
In medium sized bowl , whisk together the champagne and sour cream. Gradually add in the flour mixture in three parts, alternating with champagne mixture. Mix until batter is smooth and creamy. Fill baking cup about 3/4 full and bake for 20 minutes or until toothpick comes out clean. Remove from the oven, transfer cupcakes to the cooling rack and allow to cool completely before frosting.
To make the frosting, cream the butter until fluffy and pale yellow the gradually add the powdered sugar continue beating until creamy and smooth then gently add the champagne beat well until well incorporated. Transfer to the piping bag with five stars tip then pipe to the cooled cupcakes. Sprinkle with gold pearl and dusting with edible rainbow dust. Dressed with gold cupcake liners
