Portuguese Egg Tart

Flaky and Crispy crust, caramelized filling are the best combination ever! And all in a bite-size tart. They are perfect for those with a true sweet tooth. These are pretty simple to make just like you make a Croissants. It needs more time to make crust.

INGREDIENTS :

For the Crust 

  • 1 cup all purpose flour 
  • 80 ml whole milk 
  • Pinch of salt 
  • 100 grams unsalted butter 

To make the crust, roll the butter into thin sheet using the parchment paper the refrigerate for 30 minutes then in a medium bowl combine the flour, milk and salt, knead to form a soft dough then pop up into the fridge for 30 minutes. When time is done, bring the dough out from fridge roll and place the butter and sealed completely and bring back to the fridge for 30 minutes after the time is done bring out then roll againand fold just like a book repeat the process for about 5 to 6 times to create a flaky, crispy crust. The last thing roll the dough into a log and refrigerate for 2 hours before assembling the egg tarts.

For the tart filling 

  • 250 ml whole milk 
  • 50 grams white sugar 
  • 1 tbsp cornstarch 
  • 60 ml double cream 
  • 2 large egg yolks 
  • 1/2 tsp vanilla extract 

To make the tart filling, combine all the ingredients under the tart filling in a heat proof mixing bowl, then heat up over water bath, whisking all the times until it thickens. Then remove from water-bath and start to assemble the egg tart. Cut the dough into 10 pieces then roll each piece into small circle and place into the egg-tart moldthen scoop in the filling. Repeat the process until all done. Then bake at 450F pre-heated oven for about 20-22 minutes. Let cool down before serving Hope you give a try for my recipe πŸ˜ŠπŸ™.
