I love ❤️ Biscotti as I love ❤️ coffee they are perfect match. There are few beautiful things about Biscotti. First it twice baked process makes them very dry and crispy, second is that they have no butter, fat or oil so, you dnt feel so guilty eating them if you are healthy conscious. And the last thing about Biscotti is the way taste when you dunk it into a nice cup of coffee, tea or hot chocolate.
It has great cinnamon raisin flavour, sweet almost like an aotmeal Raisin cookie with the faint of rum. That’s why I love ❤️ very much the Biscotti.
- 1 cup all purpose flour
- 1 large egg
- 1/2 cup granulated sugar
- 1 tbsp rum
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/3 cup raisins
Pre heat the oven at 375 F, line a baking sheet with parchment paper or lightly greased it. Using hand mixer beat the egg and sugar for 3 minutes until it very light and thick. Then add the rum and vanilla extract, beat for another one minute.
Sift in the flour, baking powder, salt, ground cinnamon and mix together until it forms a soft dough and add the Raisin mix until well combined. Turn the dough out onto your baking sheet and with damp fingers, form it onto a log about 2 inch by 12 inches.
Then place into the oven and bake for 15-20 minutes until lightly golden and firmed. Remove from the oven and let it sit for 15 minutes. Just maintain the temperature of the oven. After 15 minutes resting place the log into the cutting board and cut using serrated knife, cut the cookie at an angle into 1/3 inch wide slices. Arrange the slices on same baking sheet and bake for about 7 minutes until golden brown ,remove from the oven and turn to other side of the Biscotti then bake again for another 5 minutes then remove and let it cool. Can store to the airtight container for long is still fine.
