Fresh Orange Muffin with Zesty Orange Glaze

Orange is like sunshine packed into a fruit. I love orange in any form, they are so sweet and bit tangy.

Fresh squeezed orange juice and orange zest mixed in the light and airy muffin batter with the zesty orange glaze. It’s so delicious and fresh right? So here we go…..

INGREDIENTS:

  • 1 3/4 cup plain flour
  • 2/3 cup white sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter
  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup fresh orange juice
  • 2 tbsp Orange zest
  • 1/2 tsp Cointreau

For the Zesty Glaze:

  • 1/2 cup powdered sugar
  • 1 tbsp Orange zest
  • 1/4 cup fresh orange juice

METHOD:

  1. Pre heat oven to 200degree C , line the Muffin tins and set aside.
  2. In separate bowl combine flour , baking powder, and salt whisk to incorporate.
  3. In the other mixing bowl cream the butter and sugar using hand mixer until pale and fluffy, then add egg, orange juice, orange zest and buttermilk mix until all incorporated.
  4. Then combine the wet mixture to the flour mixture mix until all combine the add the Cointreau fold to combine and pout the batter to the prepared muffin tin and bake for about 15-18 minutes.
  5. After done baking remove from the oven and let it cool in cooling rack.
  6. To make the Zesty glaze, in small bowl combine the orange zest and orange juice then add the powdered sugar whisk until combined and spread to the top of the muffin and serve.
